Going to take the fish out the freezer...

Not caring what other people think is the best choice you will ever make 

I wasn’t ready for the alarm this morning even though I went to bed at 9, yet tomorrow when I can sleep in you watch me be wide awake by 5 or mom will wake me at 4, you gotta love life. 

I’m ready for my long, enjoyable day today, I’ve got healthy foods at the ready, I will survive.  I ate strawberries yesterday and they were so good, it really is the best time of year to eat them.  I’m put a lot of berries and fruit in my online shopping basket this week, it’ll come tomorrow now though as I thought I’d placed it for today and I hadn’t, I’ll stop at the Tesco garage and grab a punnet of raspberries to snack on.  Here’s to making a new habit, I will start enjoying fruit and yogurt and making it party of my daily diet, might grab some soya one as soya is supposed to be good for us maturing ladies.

I’m loving my meetings this week, I ran over the talk time last night it was great, they had plenty to say and their total weight loss was well over 100lb, just brilliant.  Lots of new members joining this week too, May is definitely full of motivated members and I love it.

Think I’ll make me an omelette this morning, that’ll keep me going and satisfied all morning then, I might take some salmon out the freezer too, need to keep those points low so I can enjoy a glass of vino later.

Talking Salmon, these sound delicious! 

Tikka masala fishcakes
Feeds 4, 10SP each 

500g (1lb) salmon, skinned and cut into chunks
1 tbsp tikka masala paste (3SP)
6 spring onions, chopped
1 lemon, zested and cut into wedges
3 tbsp plain flour (6SP)
2 tbsp vegetable oil (9SP)
4 pitta breads, cut open (20SP)
1 little gem lettuce, leaves separated
lime pickle, to serve

Pop these tikka masala spiced fishcakes into a pitta for a quick and easy lunchtime treat. They're packed full of flavour and are ready in less 30 minutes.
  1. In a food processor, gently pulse the salmon, tikka masala paste, spring onions and lemon zest, until combined.
  2. Scatter the flour over a large plate; season well. With lightly floured hands, divide the salmon mixture into 16 and shape into patties. Dust in the flour.
  3. Heat the oil in a non-stick frying pan over medium-high. Fry the patties for 2-3 minutes on each side, until cooked through. Drain on kitchen paper.
  4. Stuff the pitta breads with the fishcakes and lettuce leaves. Serve with lemon wedges for squeezing over and a dollop of lime pickle.

Burgers & Booze - yeah with WW you can!

I’d rather have extra space and extra time that extra stuff.

WHY?! Why does my mom decide half four is a good time to go to the bathroom and start cleaning her teeth lol, who needs an alarm clock, oh yeah I didn’t have to get up early today.  Morning, well other than a little early and awake, I’m good this morning, I got me a stayed the same on the scales yesterday and I’ll take that for sure.

It proves through Weight Watchers I have picked up healthy habits, yesterday I ate this;

Delicious it was, although my aubergine and feta burger still takes the first place this week. It did remind me how much I like iceberg lettuce though!

Now it cost me 19SP which is doable on a counting day if you have zero breakfast and lunch, but with Weight Watchers there’s flexibility and I could bring the points of that down a great deal, I could make my own burger from 5% lean beef, lower in Smart Points at 3SP for a quarter pounder or free on No Count, then there’s the good old Warburton thin for 3SP or free on No Count if you have the brown ones, if I was pointing I’d spend the extra point on that bun or use my scales and take a little of the bread out of the middle of the bun until it was 3SP for me it’s tastier than a thin, then the fries, actually for 6SP they are a find, but you could make your own if you’re doing No Count.  There’s always ways to save a few points, you could switch the chips for a giant salad and then you’d have 6SP for either a large glass of wine or a few G&Ts. 

The plans liveable and flexible especially when we want to enjoy the sunshine and have BBQs, follow the Counting approach all week and rollover the 4SP to your weeklies each day, then on BBQ day you’ve got your weeklies, your rollovers and if you do No Count, it’s easy to do a No Count BBQ and you can use those weeklies and rollovers for the extras, wine, beer, ice creams, whatever floats your boat.

Then there’s the dips, I found this recipe on Instagram, sounds good.

Chilli, lemon & coriander houmous

1 can chickpeas, drained and rinsed
1 crushed garlic clove
Juice of 1 whole lemon
Lemon zest
1 chopped medium chilli pepper
Handful of chopped fresh coriander
1 tsp ground cumin
Salt to tast
2/3 tbsp fat free Greek yogurt

Blitz it all together in a food processor and enjoy.

I STOMP a lot!

If it doesn’t make you feel fabulous: don’t do it, don’t buy it, don’t keep it.

Ooo that alarm, it’s just never welcomed when it gets to ring, I don’t get to hear it very often because I wake up before but not this morning, the one went off, then the other followed as I walked to the bathroom, need to put more than 1 minute between the two I think give me time to turn the second one off.   I’m up and ready for my day, well I will be after my pint of water, my shower, followed by my mug of tea,

I’m sat here thinking, ‘what shall I blog about?’ I didn’t do much yesterday, managed to get a massage on my back in the hope that it’ll ease it, walked the dog twice, sat up the garden with mom and chatted.

Food wise I started my day with eggs and asparagus with toast, then I had this;

It was really tasty for a tofu dish, unfortunately it was 24SP and expensive even with being reduced!

I’m aiming for a stayed the same on the scales today, healthy is on the agenda more so than weight loss, I don’t want to be gaining though. I’m liking this version of me, I have a very healthy glow from sitting in the sunshine, I have a calmer mood from all the chilling and I’m much more relaxed most of the time, it’s helping with the stressful times and even when I do have the bad days, I recover from them quicker and even whilst they’re happening, I’m aware of it.

When mom's being a nightmare, instead of reacting and getting wound up, I use my STOMP technique to cope,

Stop, I pause and 
Take a deep breathe & 
Observe the situation, my thoughts, feelings and my physical response (my body tenses – this is one of the reasons I have back pain), then I
Manage the situation with as much love and calmness as I can and I remain
Patient by reminding myself she doesn’t choose to be this way

Yeah no one chooses to get old, infirm and unable to do things for themselves, I so which I could make her better but as that’s not an option, I can do everything in my power to make things as easy as possible.

I’m going to have a burger today, I’ve fancied one now for a few weeks, they’re in the fridge ready, I do think it’s not going to be as good as I imagine and I’ll be very surprised if it’s as tasty as that aubergine and feta one I tried was, now that was tasty, I wish I could make my own that tasty – maybe that’s what I need to work on, mastering the veggie burger.  I looked at the ingredients in that one and it wa;

Potato, Aubergine (15%), Onion, Lentils, Rapeseed Oil, Feta Cheese (Milk) (6%), Spring Onion, Chickpeas, Sweet Potato, Free Range Whole Egg, Cornflour, Potato Starch, Fortified Wheat Flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin), Garlic Purée, Red Chilli Purée, Parsley, Mint, Salt, Cumin Seeds, Extra Virgin Olive Oil (0.3%), Tomato Purée, Ground Cumin, Ground Black Pepper, Ground Coriander, Ground Paprika, Yeast

So it’s all about finding the right combination of potatoes, lentils, chick peas, veggies and seasoning.  Yeah maybe I will, I know I’ve tried before but I haven’t ever read any rules that you’re only allowed to try something once!  They’re a cheap meal if you make them yourself too I reckon. 

I know I can buy them but they come in quite high in Smart Points hence my eagerness to make my own, because the veggies, lentils, chick peas and egg are zero on a No Count day the potato, sweet potato and skimmed milk would be too!

Anyway I have a job to get too, it’s a little cloudy out there but no forecast of rain, that didn’t come yesterday, are we in for a long, hot summer?  I do hope so, although we need rain sometimes for the plants and of course for us!  Make sure you’re drinking your water people, it’s what keeps us alive.
