Multi-purpose - I like that idea

Couldn’t believe it was time to get up this morning, sleep all night without waking ;D   I’m fully refreshed and raring to go.  I’ve had a lovely weekend which always makes me feel great come Monday because I know I’ve got another one to look forward to in five days time and I’m lucky enough to enjoy the five days inbetween.

Monday morning means back in the zone for me and hopefully anyone else who hasn’t been 100% over the weekend, I ate out way to many times to even remotely come close to staying within my dailies and weeklies, so from now to weigh day its 29pp a day and pray!   Whatever the scales say I’ll take on the chin, but I will stay on track till then.

This weeks meetings looking good, and for it I found this recipe in BBC’s Good Food magazine which is excellent for lots of different things;

Multi-purpose mince
makes 12 portions, 9 ProPoints per serving

PREP 15 mins COOK in 1 hr 10 mins, easy

3-4 tbsp olive oil
2kg/4lb 8oz good quality beef mince
4 onions, chopped
6 large carrots, chopped
4 celery sticks, trimmed and sliced
4 garlic cloves, crushed
4 heaped tsp tomato pur6e
2 tbsp plain flour
3 bay leaves
4 tsp Worcestershire sauce
2 x 400g tins chopped tomatoes
1 lltre/1¾ pints beef stock


1 Put 1 tbsp of the oil into a large frying pan and heat. Add about a third of the mince and, over a high heat, brown all over. Using a slotted spoon, remove it to a bowl, then fry the remaining mince in two batches, adding a little more oil as needed. Remove to the bowl.

2 Add the onions, carrots and celery to the pan. Fry gently for about 10 mins, stirring every so often. Transfer the meat and vegetables to a large saucepan.  Add the garlic, tomato puree and flour and stir over the heat for a couple of mins. Add the bay leaves, Worcestershire sauce, tomatoes and stock. Stir, season and simmer for 45 mins, stirring every so often until reduced and thickened.  Eat immediately, or cool and freeze.

How to use your Multi-purpose mince
• For a simple cottage pie, reheat adding some frozen peas, top with mash and bake.
• As Bolognese, simmer until bubbling with a pinch of dried thyme and oregano. Spoon over pasta; eat with grated Parmesan.
• Make a chilli con carne by adding a tin Of drained kidney beans, a large pinch of chilli powder and a splash of red wine. Reheat and serve with rice.
• Stuff into halved peppers, or simply spoon over jacket potatoes and bake.
• In a lasagne

Doesn’t that sound tasty and easy to cook and only 9pp a portion, bonus!

Not so good is the fact my printers just broken trying to print them, so if you have a printer don’t pick one of the ones up that I’ve printed for meeting, print it off yourself as I’m going to run out.
